Arroz con Salchichas {Recipe}

Every once in a blue moon I tend to cave in to the wishes of my dear Husband, Alexander. When it comes to food, he is very easy going, eats almost everything and is happy to give me feedback. As of lately, he has been craving a dish from our childhood which is also a typical Puerto Rican dish: Arroz con Salchichas

 

Allow me to give you a quick overview of what this dish is.

 

Arroz con Salchichas is a simple dish that is very common on the Island, especially in those cities that are in the deep country-side. For most of us, who can relate to being born and raised in Puerto Rico, can openly say that when our Mami's were cooking Arroz con Salchichas then money was tight! Ha!

 

The only reason why this meal is thought of this way is because of the simplicity of the dish – Not because of the taste or look of it, just the ingredients.  Trust me, when you see what ingredients are used, you will probably understand why this mental note comes to mind when cooking this recipe.

 

So, to please my husband’s cravings, this is how I made his  Arroz con Salchichas

 

Ingredients

 

1½ cups long grain rice

3 cups water

1 Knorr Homestyle Stock*

1 (5oz) can Vienna Sausages (it has to be with this sausage – no substitutes allowed!)

2 oz thinly sliced beef deli meat

2 tbsp sofrito (this is a seasoning mix that can be located in the Latin Foods section of most stores)

¼ cup cubed tomatoes

1 sobre sazon (this is a seasoning mix in a box can be located in the Latin Foods section of most stores)

1 tsp onion powder

½ tsp salt

½ tsp ground pepper

¼ cup chopped fresh cilantro

2 tbsp. butter

 

Place all the listed ingredients in a large cooking pot on medium-high heat.  Stir ingredients only once and taste for seasoning.  Adjust seasoning to suit your taste.

 

Allow water to come to a rolling boil. Once boiling starts, allow the water to evaporate from rice. As soon as there is NO water in rice – Lower temp to lowest setting and cover pan.

 

Cook rice – covered tightly – for 25min.  Important: DO NOT OPEN COVER and DO NOT STIR RICE – let it cook!

 

After 25min, open cover, using a fork fluff rice and Serve.
