Pollo Frito.... Fried Chicken
It really doesn't matter in what language you say it in, Pollo Frito is a classic recipe that many of us prepare for our familes, especially for tailgating, picnics in the park, road trips, and the like.
Pollo Frito travels well, can be eaten hot or cold, and is just "good comfort food". Period.
Next time, you crave Pollo Frito, give this recipe a try.
Ingredients:
1 (4lb) chicken, cut into pieces
salt and pepper (to taste)
1 1/2 cups all purpose flour (for coating)
2 quarts vegetable oil (for frying)
1/8 cup (more or less) of your favorite blend of seasoning**
1 cup buttermilk (for coating)
In a large skillet, heat oil over medium heat.
Sprinkle salt and pepper over chicken on both sides, to taste. Set aside.
In two seperate bowls, place the flour and seasoning blend in one (combine) and the buttermilk in another.
Taking each piece of chicken, dip them in buttermilk first, then dredge the piece in the seasoned flour.
Place the chicken in the grease. Allow chicken to cook until golden brown on both sides.
